All of these wedding cakes can be made with various cake types – Victoria sponge, traditional fruit cake, gluten free, chocolate etc. See here for a bit more on the types of cake. Each layer can be different, although fruit is heavy so that tends to be best on the base layer. Fruit cakes also take a while to mature & feed with brandy to make them moist (and delicious) – so don’t delay, book the date in with me for your wedding cake !
