Amanda & Nick’s romantic destination wedding in the Byron Bay hinterland

It was a three-day affair, this elegant destination wedding in the Byron Bay hinterland, with Gold Coast couple, Amanda Meadows and Kiwi Nicholas Martens.

They met at work nearly 10 years ago – Amanda was Nick’s boss at Formula Sports shortly after he moved to the Gold Coast from New Zealand. Amanda was in between degrees (business and teaching) and they it wasn’t until three years later they started dating.

Five years on (after Nick proposed ice-skating in Central Park, New York!) their beautiful winter wedding was held at Peppers Coorabell Retreat, with 80 friends and family travelling to stay in and around the exquisite property for two nights. The celebrations commenced the night before at the Byron Bay Hotel. “It was lovely to share so many wonderful memories with the wedding guests,” says Amanda.

Made even more special was the fact that two days after the wedding, the couple would jet off to the United Arab Emirates. Not for a honeymoon – which is still in the pipeline – but for Amanda to take up a teaching position at the Australian International School in Sharjah. The ultimate send off!

Hence the couple used a wedding planner – Creative Weddings Byron Bay – to take a load of their hands while preparing to move countries. “A wedding planner is a must!” says Amanda. “Assists with all the smaller details – bits and pieces I had not thought of or knew where to start.”







Amanda’s deep V-neck ivory lace gown was from Darb Bridal Couture in Brisbane which featured an elegant satin waist sash. She wore matching peep toe shoes with beaded heel detailing from Coast, and crystal and pearl drop earrings from Samantha Wills.




Nick wore a handmade black textured peak lapel suit from Brisbane tailors, The Cloakroom. He paired it with a grey freestyle bow tie, white dinner shirt and white pocket square.





Amanda was walked down the aisle to traditional wedding song, ‘Pachelbel’s Canon in D’, played by Byron String Trio. The trio also played Etta James’, ‘At Last’, and The Beatles’, ‘All You Need is Love’.




Amanda tells, “We had champagne flowing down on the deck immediately after the wedding ceremony. The cake was cut – a high tea, including a dessert buffet – before photos were taken and before the reception. Guests were in love with the beautiful mini desserts [catered by friend, Lexie Wykamp], while we wandered through the hinterland having our spectacular photos taken by the magnificent Josh.”






This classically elegant wedding was designed and decorated by the bride herself, with assistance from Ainslie Gascoigne of Creative Weddings Byron Bay – Amanda’s wedding planner.
